Marshland Farm Ravioli
Four cheese filled ravioli, tossed with a fresh basil pesto cream sauce, topped
with grilled seasonal vegetables and fresh mozzarella cheese

Pork Tenderloin
Pork medallions with capers, roasted red peppers and mixed olives in an herbed
butter and white wine sauce, served with wild rice pilaf and sauteed seasonal vegetables

Grilled Salmon
Char-grilled North Atlantic salmon fillet with a fresh peach chutney, topped with a
sprinkle of roasted pistachio crumbs, served with wild rice pilaf and seasonal sautéed vegetables

Top Sirloin Chasseur
Black pepper encrusted pan seared top sirloin steak topped with sauce chasseur,
a rich blend of tomatoes, mushrooms and cognac, served with dauphinoise potato and seasonal sautéed vegetables

Quechee Braised Chicken
Slow braised chicken thighs smothered in a honey & hoisin glaze on a bed of
grilled bok choy, dressed with fresh chimichurri sauce, served with wild rice pilaf and seasonal vegetable
