Marshland Farm Ravioli

Vermont crafted four cheese filled ravioli, tossed with a curried green apple and butternut squash ragout, topped with toasted pumpkin seeds

Pork Tenderloin

Stuffed with Boursin cheese and braised red cabbage, wrapped in bacon, pan roasted, and dressed with a black rum infused apple sauce, served with dauphinoise potatoes and sauteed seasonal vegetables

Grilled Salmon

Char-grilled North Atlantic salmon fillet with a fresh white balsamic vinegar and black cherry glaze, topped with crushed macadamia nuts, served with wild rice pilaf  and seasonal sautéed vegetables

Marshland Top Sirloin

Black pepper encrusted pan seared top sirloin steak topped with a hen of the woods Hunter Sauce, dauphinoise potato and seasonal sautéed vegetables

Ottauquechee Chicken

Boneless breaded chicken breast stuffed with asparagus spears and smoked Grafton cheddar, topped with a creamy Parmesan Mornay sauce,  crispy prosciutto, served over herb buttered cavatappi pasta and seasonal vegetable
